Savory Veggie Scramble

The story I now have of making this dish is actually a little funny. My sister and I decided to make roasted cauliflower for dinner, and while I was at the store, I saw all the yummy other veggies, and decided to play around a little and make my own recipe. However, when I began ripping/cutting up the first head of cauliflower, I got quite the shock, because the whole head was infested with spiders!! (My step-dad didn’t help us get rid of the cauliflower, either, he just said ‘whoa, cool’… *rolls eyes* Men!)

But, once we got the first head thrown away, it was smooth sailing to a great meal! So, the moral of the story is always inspect your veggies closely for bugs! Before and after you buy!

We paired the scramble with veggie burgers, raw cherries, and RUNA hibiscus berry iced tea. 🙂

Here’s the recipe:

Savory Veggie Scramble

Ingredients:

  • 1 head of cauliflower
  • 1 zucchini
  • 1 yellow squash
  • 1/2 red onion
  • Paprika, parsley, pepper potpourri, and garlic powder to taste
  • Salt
  • A bit of olive oil

Instructions:

1. Break up the head of cauliflower into smaller, bite size pieces; slice zucchini and squash into small chunks; and chop red onion.

2. Heat a pot of water with a pinch of salt on the stove, and boil cauliflower until tender. About 5 minutes. Strain cauliflower.

3. Add just enough olive oil to the bottom of a large frying pan to thinly coat the pan. Add cauliflower and season with salt, paprika, pepper potpourri, parsley, and garlic powder to taste (I put a lot of paprika and parsley on mine). Add other veggies on top.

4. Heat on medium-high and stir until all veggies are softer. (My zucchini and squash still had a little bit of bite to them, and I liked that.)

Vegan Portobello Pizza

This Vegan Portobello Pizza looks delicious, and only takes about 30 minutes to prepare and cook! In order to make it more ‘clean’, you can try using fresh, minced garlic instead of garlic powder, fresh oregano and basil, and using this recipe for the pizza sauce, instead of buying from the store!

Here’s how to make it:

Ingredients:

  • 3 large portobello mushrooms, wiped clean, stems removed
  • Olive oil
  • 1/4 tsp garlic powder
  • 1/4 tsp dried basil
  • 1/4 tsp dried oregano
  • 1 cup pizza sauce
  • Vegan parmesan cheese
  • 1/2 cup mixed veggies (onion, mushroom, tomato, green pepper, etc.)

Instructions:

  1. Preheat oven to 400 degrees F.
  2. Place cleaned mushrooms on a baking sheet and lightly drizzle both sides with a little olive oil. Sprinkle with garlic powder, basil and oregano, then bake for 5 minutes.
  3. In the meantime, prep veggies and prepare pizza sauce if you haven’t done so already.
  4. Once par-baked, pull mushrooms out of the oven and top with desired amount of pizza sauce, veggies and a sprinkle of vegan parmesan.
  5. Bake for 15-20 minutes, or until the veggies are mostly cooked.
  6. Serve with fresh basil, red pepper flake and extra vegan parmesan

Clean Eating and Veganism

Not a lot of people understand what clean eating is, but it’s simply remembering that our bodies are animals, and trying to live as close to nature as possible. That means cutting out processed foods, refined foods, and replacing a lot of those things with healthy, natural alternatives.

Veganism gets a bad rap, in my opinion, but at the end of the day, it’s a personal choice to cut animal products and byproducts out of your diet completely. Some will even cut out leather and fur from their wardrobe, too. But, just like exercising, it’s a lifestyle decision and there are different ways to do it. There’s many reasons for being a vegan, but the health benefits are often too good to ignore 😉
